Now, it's obviously a matter of personal taste but I've always found coffee to be something of a disappointment. The smell of roasting coffee is completely wonderful and when you begin to smell that wonderful aroma you just can't wait to try it and enjoy those complex and interesting flavours. But when you actually make it, it never rises to the occasion. It appears almost impossible to catch the promise of the roasting beans.

And it's only in the last few months I've found out why. The answer was right under my nose all along. I bet that just like me you've been putting tap water into your filter machine with never a thought about its flavor. Surely all water is the same I hear you say Well no, that's wrong, actually. Virtually in the US gets their water down a pipe from the utility company. As you will be aware water companies act to protect their interests by making sure that you and I come to no harm through using their product. So they put lots of chemicals into the water. Now they do this for the best of possible reasons. It's to protect our health. They put in disinfectants to keep bacteria levels low. They put in other chemicals to keep Protozoa populations down and they add fluoride to make sure that we never need fillings in our teeth. And it works too-outbreaks of diseases like this are very rare occurrence in the US. But even when they're in very low concentrations they still impart a nasty taste to the water.

And that's why my coffee has always been a disappointment. My chief gripe is that regardless of which type of coffee I used they always seem to leave a bitter aftertaste. I thought maybe it was because I was using arabica beans, so I changed to robusta. And then sometimes I'd switch back the other way. I must have purchased hundreds of different blends of coffee in the search for a satisfying cup of coffee. I could have saved myself a lot of anguish by buying a Cuisinart DCC 1200 from the start. The crucial thing about this machine is that it' fitted with an activated charcoal filter that filters out pretty much every molecule of chemicals from the water with which your coffee is going to be made. And you won't believe what difference it makes. You might think I'm going over the top a bit here but if you get one of these machines you'll be amazed what a superb cup of coffee it will make even with less expensive blends of coffee.

In hindsight of course it all makes perfect sense. Hindsight is a wonderful thing but it's a bit exasperating when it shows you just what an fool you've been. The water in your coffee makes up about ninety-nine percent of the entire beverage anyway so it's unsurprising that its flavor affects the flavor of the drink as a whole.

There's nothing like a really fresh cup of coffee but you'll be surprised to discover that even a couple of hours after brewing, the coffee retains its rich and satisfying flavor.
